Our neighbor, Reza Ekhtera, works with his family to hand harvest and carefully pack stamens from crocus flowers, pollinated by his bees. Fresh saffron smells like sweet hay mixed with freshly mown grass, and a whiff of pepper. It has a subtle, earthy flavor, with a tinge of bitterness, that gives way to delicate floral honey notes. Known as the world's most expensive spice, saffron can be used to perfume rice or risottos, curries or stews, desserts or baked goods!
