The hock is the lower leg of the pig. Containing as much bone as meat, this cut is tough but extremely flavorful. Use slow-cooked into beans, soups or stews. Adds a depth of umami richness and lots of good collagen. These hocks are not cured, smoked, or seasoned to feature the clean flavor of the hog.
