This bloomy rind wheel is made with blended sheep and cow milk in the style of a classic French Camembert. Firm when young, it becomes softer and creamier as it ages. The flavor of the cheese is bright with a citrus note when it is young. As it ages Woolly Rind develops mushroomy flavors and a lovely aroma of the forest floor.
