Produced by world champion cheesemakers in Switzerland using century-old techniques. Reminiscent of a “baked potato” rind with notes of roasted nuts, umami, caramel and onions. A long ripened cheese made from raw milk.
This cheese is made from cows that live in small herds of no more than 25 cows per farmer, have free run, eat lush grass and meadow flowers in summer and sun-dried hay in winter.
